Flavorful, good for you, and EASY! Use this Parsley Pesto on anything from pasta to veggies, or even as a topping for your favorite snack.
1 cup fresh parsley (I prefer flat leaf)
2 tablespoons fresh basil
1/2 cup parmesean
1/4 cup each: raw, unsalted almonds and walnuts
1 tsp each: kosher salt and garlic powder (substitute 1 fresh garlic clove, if desired)
2 tablespoons olive oil
In a food processor, combine all ingredients until a finely-ground consistency develops.
Add more seasoning to suit your taste. Depending on ingredient moisture, you might have to add more parsley or more olive oil. Use your best judgement!
That’s it…your pesto is ready to be savored! Stays good in a refrigerated air-tight container, or freeze in air-tight plastic bag for weeks and weeks.
