For the Balsamic Chicken
2 chicken breasts combined with
  1. 2 tablespoons balsamic vinegar
  2. Salt, pepper and garlic powder to taste
For the Red Pepper Spread
  1. 1 cup roasted red pepper slices
  2. 2 plum tomatoes, halved
  3. 1 tablespoon each, lemon juice, fresh basil and fresh parsely
  4. Salt, pepper and garlic powder to taste
Grilling
  1. Heat grill to medium-high and spray with oil.
  2. Lay chicken, pepper strips and tomato halves on grill top. Allow the veggies to develop grill marks before removing, and ensure that the chicken is fully cooked (4-5 minutes on each side depending on size).
Making the spread
  1. In a food processor, combine ingredients and give it a few pulses. That’s all it takes.
  2. Serve grilled chicken over a few spoonfulls of the spread. Garnish with additional basil or parsely if you’d like!
